Divide the milk in two: 500 ml for the vanilla cream, 500 ml for the nes cream.

For vanilla cream, put the sugar together with 300 ml of milk on low heat and let it heat up (3-4 minutes). Meanwhile, mix the 200 ml with starch (only 60 gr) mixing with a whisk to dissolve well then add 3 egg yolks rubbed a little with a pinch of salt.

When the milk has warmed up, add it in a thin thread over the milk with starch and yolks, stirring constantly with the whisk. We put it back on the fire and chew continuously until the cream thickens like a pudding. When we remove it from the heat, add 1 teaspoon of vanilla essence.

Cover the cream with cling film and let it cool. When it has cooled, add the whipped cream and put a layer in the cups prepared for dessert.

For snow cream, we proceed in the same way as for the vanilla cream, only that, when we mix the 200 ml of milk with starch, we will first dissolve the nes in milk and then we add, the starch and the yolks.

Let it cool and put the second layer of cream (in which I incorporated whipped cream, as in vanilla cream).

At the end, garnish with whipped cream in which I put sugar to taste (2 tablespoons).

Keep in the fridge until ready to serve!

It is fluffy, cool and delicious!
