Ingredients baked with pumpkin, eggplant and tomatoes:

  • 4 tablespoons olive oil
  • 4 large pieces of chicken breast, without bone and skin
  • 2 clean and chopped seabeds
  • uncooked garlic cloves, lightly crushed
  • a few sprigs of thyme
  • a few sprigs of rosemary
  • 2 shaped and diced pumpkins
  • 1 glass of dry white wine
  • 200 g chopped tomatoes, canned

Sprinkle salt on eggplant and put them in a strainer for 30 minutes to drain the bitter juice. Rinse them under running cold water and dry them on a paper towel.

Preheat the oven to 190 degrees Celsius. Heat two tablespoons of oil and fry the chicken breast pieces in them, 3-4 minutes on each side. Leave the meat on a plate.

Put the rest of the oil and salad, garlic, eggplant and a few sprigs of thyme and rosemary in the same pan. Leave on the fire for 5-7 minutes, stirring occasionally until the onion softens and becomes translucent. Season everything with salt and pepper. Add the zucchini and wine and simmer until the wine is reduced by half.

Heat a tray with higher walls in the oven, grease it with a little oil beforehand. Mix the tomatoes with the hardened vegetables and put everything in the pan. Place the chicken breast on top and sprinkle with a little olive oil. Sprinkle a few sprigs of thyme. Bake for about 10 minutes, depending on the thickness of the meat.

Method of preparation:

2. Meanwhile, clean the onion, wash and cut the fish. Add over the fried meat and cook together for another 5 minutes, over low heat.

3. After this time, gradually pour 200 ml of water (or clear soup) and leave on low heat for another 20-25 minutes.

4. Eggplants, washed, cut into 1-1.2 cm thick slices. Sprinkle with salt and leave for 10 minutes. Then wipe with a napkin and fry for 1-2 minutes on each side in the rest of the oil. Add to the meat and onion dish.

5. Wash the tomatoes and cut them into cubes. These are put in the bowl with meat and eggplant, along with crushed garlic, salt, pepper, bay leaves, allspice powder and 1 tablespoon of chopped greens. Cover the dish and put in the oven for 30 minutes on medium heat.

6. The food is served hot, with chopped greens sprinkled on top.

Before putting the dish in the oven, you can pour 1 glass of semi-dry white wine.
